Nut roll filling
This mix of finely ground walnuts, grated apple, sugar and cinnamon is the delicious filling for Eastern European nut rolls.

  1. Using a food processor, finely grind the walnuts.
  2. In a large saucepan, combine the sugar, vegan butter, and cinnamon. Cook and stir over medium heat until mixture reaches 160° or is thick enough to coat the back of a metal spoon. Remove from the heat; gently stir in walnuts and apple. Cool completely.
