This is the nut filling that goes in orehnjaca, eastern European holiday nut rolls. This is a vegan version, but you can use dairy butter instead for a more traditional filling.

- 1/2 cup organic granulated sugar plus 1 tablespoon
- 1/4 cup vegan butter
- 1/2 teaspoon ground cinnamon
- 2 1/4 cups ground walnuts
- 1/2 large apple peeled and grated

Instructions
- Using a food processor, finely grind the walnuts.
- In a large saucepan, combine the sugar, vegan butter, and cinnamon. Cook and stir over medium heat until mixture reaches 160° or is thick enough to coat the back of a metal spoon. Remove from the heat; gently stir in walnuts and apple. Cool completely.
