Easy Apple-cinnamon Oatmeal

  1. Mix the oatmeal, water and apple juice in the 20 oz mug. Add dried fruit of your choice; the fruit will plump up when cooking. Microwave on high for 2 minutes. Take the oatmeal out and stir. If you can still see the individual oats or there is a lot of liquid in the mug, microwave for another 20 – 30 seconds. Microwave wattage varies, so you may have to adjust for your situation.
  2. Take the oatmeal out of the microwave and stir in any additional ingredients. I love frozen wild blueberries for an extra tasty antioxidant kick. The small berries quickly warm in the oatmeal. If you are using larger frozen fruit, you may want to cook them along with the oatmeal and dried fruit. Top with slivered almonds and cinnamon if you choose and a splash of milk.
  3. Within a few minutes you will be eating a hearty, healthy and delicious breakfast. The apple juice sweetens the oatmeal perfectly to my taste. If you are diabetic or avoiding all sugar, you can use all water and add a sweetener of your choice.
