Ingredients
- 1 1/3 cups of rolled oats
- 1 1/3 cups of almond milk or other non-dairy milk
- 1 1/3 cups of canned pumpkin not pumpkin pie mix
- 1/4 cup of pure maple syrup
- 2 teaspoons of cinnamon
- dash of ground nutmeg
- dash of ground cloves
- dash of ground ginger
- dash of salt
- 2 tablespoons – 3of dried cranberries optional
- 2 tablespoons – 3of chopped walnuts optional

Instructions
- Preheat oven to 380º F.
- Mix the oatmeal, almond milk, and pumpkin in a medium sized bowl. Stir in the spices and dried fruits and nuts (if using). Pour into four ramekins.
- Bake for 18 minutes. Broil for 2-3 minutes more for a crunchier top.
